a charming Restaurant-cum-Hotel, the Albergo/Riostorante Il Cascinale
Nuovo. Well away from the Statale Asti Alba, Il Cascinale Nuovo
began as a small diner serving mostly truckers. With the passing
of time, the huge barn type dining room was transformed into a hotel
with fifteen rooms on the upper floor with all modern amenities
and comforts. The ground floor housed restaurant with elegant and
lovely décor that radiates charm and an old world courtesy.
Take a swim in the pool and walk into the spacious interiors to
satisfy the taste buds.
You will be greeted by a family whose reputation
has preceded them. Enveloped by the traditional Italian hospitality,
you will be escorted to your table. As you look around a tastefully
decorated restaurant, you will meet the owners of the family-run
business, Armando and Silvana Ferretto. While Silvana presides over
the kitchen, Armando makes sure that everything works with precision
as he supervises the natural produce from the vegetable garden.
Working in tandem, the sons, Chef Walter is famed for his culinary
expertise and experience and Roberto who looks after the running
of the restaurant and the canteen. Roberto’s wife, Patrizia
looks after the hotel and sees to the detailed care and quality
of the hotel.
You
will know that you are in for a real treat as Roberto guides you
through an amazing menu. While your crystal clear mineral water
is being poured, you will be served a basket of walnut and black
olive breads from the warm kitchen. Then the magic begins…You
will be taken on a magnificent culinary journey that goes back to
the 17th century. Watch the kitchens of the past come alive with
forgotten recipes and flavors. With tradition and innovation as
the fashion in this Piemonte restaurant, the extraordinary menu
opens a range of dishes like, rice with sausage and rum, hand-made
ravioli with roast beef sauce, hand-made spaghetti with dove meat
sauce and stew, slices of fresh tuna fish fried with herbs and accompanied
by mashed potatoes and herbs. Let Chef Walter conjure magical potions
with his wizardry and cast a spell over you with duck in herb sauce
with fried apples, a terra-cotta bowl of egg-plant and red pepper
with roccaverano cheese and basil pesto. The autumn season brings
in the prized truffle. Walter prefers to serve the white Monferato
truffle with his creative dishes.
Let
the divine array go on with tiny Bavarese al Carciofo, Bavarian
cream with artichokes, Carpaccio di vitella ai profumi d'autunno,
Veal carpaccio with lemon and flakes of Parmigiano, sprinkled finely
with autumn herbs, Insalata di Langhe con petti di quaglia, a lovely
light salad of freshly picked greens from the woody hills served
with roast quail's breast filet in a balsamic vinegar sauce, chopped
walnuts and pomegranate seeds mixed with greens. These culinary
creations have brought people from all over the world to Il Cascinale
Nuovo. Now go on a tasteful adventure with Tortino di verdure con
Tartufi, a pasty shell with a delicate egg and spinach filling,
and a shaving of white truffles, Tortelli di zucca con Parmigiano
e tartufi, which is a winter squash filling of the hand-made Tortelli
with cheese and truffles, Capriolo al vino bianco con cardi con
besciamella, Polenta ai funghi e broccoli.
Take
a break with Barbera D'Asti Cascina Croce Villa Dorata and enjoy
its medium bodied flavor as you are served an artistic creation
of an incredible Mountain goat stew with cardoons in a Bechamel
sauce, Polenta with mushrooms and lightly flavored sauced broccoli.
Settle the senses as you choose from a huge dish of Piemontese cheeses
