From 1994, Heinz Beck an extremely talented chef of German and not Italian origins has been at the helm of the kitchen raising its standards to dizzying heights and pleasing the most critical of Roman connoisseurs of food. He uses raw ingredients to perfection by maintaining their freshness and wholesome nature and yet adds a touch of sublimity transforming them to refined gastronomic delights. Some of his dishes are very simple and yet absolutely divine in taste. The restaurant changes its menu every month so some recommended dishes may not be available. However some of the best loved dishes at La Pergola include deep fried zucchini flowers with shell fish which is definitely a favourite, lobster with orange sauce and basil, various recipes using salmon including it in ravioli with sour cream as well salmon croquettes which are an eternal favourite especially with green rice, lamb baked in puff pastry accompanied by fresh eggplant. All the breads are freshly prepared.

An artistically presented dessert tower with petite fours and bite sized desserts are served as a compliment by the restaurant. After which you can order your soufflés, or any one of the wide range of pastries, flans (including those made with ricotta cheese) cakes or even sorbets, typical Italian ones with a touch of innovation.All the typical Italian and Mediterranean cuisine is enhanced with subtle touches by chef Beck leading to an excellent gastronomic experience. The cuisine showcases the creativity of its German chef who had made a place for himself in the hearts of lovers of Italian food including the locals.

With around one thousand eight hundred labels from all over the world, the customer is spoilt for choice and it is good to accept the help of the sommelier unless you are a wine expert yourself.

Sometimes you have to make a prior reservation to dine at La Pergola upto a month in advance.. Formal attire is advised. If you wish to avail this facility there is a separate after dinner smoking room. Most major credit cards are accepted.
